Raspberry Lemon Muffins

Raspberry Lemon Muffins 

 
   
    These muffins are easy to make and perfect to make if you have tons of raspberries. They work for a quick breakfast or a little snack during the day. Hopefully, you enjoy these muffins! 

Ingredients:

  • 2 Cups Flour
  • 1 Cup Sugar
  • 1 Tablespoon Baking Powder
  • 1/2 Teaspoon Salt
  • 2 Eggs Slightly Beaten
  • 1/2 Cup Vegetable Oil (or you can use 1/2 cup of unsweetened applesauce for a healthier option)
  • 1 Teaspoon Lemon Extract
  • 1 1/2 Cup Fresh or Frozen Raspberries 
  • 1 Cup Cream (I used milk instead)

Directions:

    In a large bowl combine flour, sugar, baking powder, and salt. Combine the eggs, cream, oil, and lemon extract; stir into dry ingredients just until moistened. Fold in raspberries. Spoon into 18 greased or lined cups. Bake at 400 degrees for 18 - 20 minutes. 

    I baked my muffins ant 375 degrees for about 15 - 18 minutes.
