Yummy Breakfast Skillet

This skillet is great for breakfast but it also works for a quick dinner. It tastes even better if you add some fruit on the side. This recipe from Six Sisters' could not be easier. Hope you enjoy!!

Ingredients:

1 1/2 Tablespoons olive oil
1 large green bell pepper, diced
1 large red bell pepper, diced
1 medium onion, diced,
2 cups diced cooked ham
5 cups frozen southern -style hash brown potatoes, thawed
1 teaspoon Cajun seasoning blend
3 Tablespoons chopped fresh parsley
Salt and pepper, to taste
(I also added some cooked sausage)

Directions:

In a large skillet, heat the oil over medium heat. Cook the bell pepper and onion for 4 to 5 minutes, or until tender. Stir in the ham and cook for 1 to 2 minutes or until heated through, stirring occasionally. Stir in the hash brown and sesoning blend. Cook without stirrig for 4 minutes, or until the bottom is golden brown. Stir. Cook without stirring for 4 minutes, or until the bottom is golden brown and the mixture is heated through. Stir in the parsley, salt, and pepper and serve.
